These days the ubiquitous Thai green curry is available in many shapes, forms and variations and is possibly Thailand's most famous dish here in the UK. Coconut Kitchen's recipe has been extremely popular in their Abersoch restaurant for 6 years and remains their best seller. So they have included all the seasonings and spices that that go into the restaurant recipe in one small jar ready for you to just add meat, prawns or vegetables and one 400ml tin of coconut milk. This fantastic paste was awarded three gold stars at the Great Taste Awards 2014, and voted one of the Great Taste Top 50! The judges said this was a very well-rounded product and loved the "great umami hit of fish sauce that has been balanced against the other flavours very well". This spicy curry paste also includes a fragrant lemongrass backbone and vibrancy from basil and lemon. "It has a good deep flavour profile," said the panel, who enjoyed the late chilli heat.

Quick cooking instructions for 2-3 servings:
Add 400ml of coconut milk into a pan, stir in the full contents of this jar. Bring to the boil and simmer for 5 mins add your preferred meat, seafood or vegetables.
Or, for Thai-style fried rice, add one dessert spoon of curry paste per cup of cold cooked rice.

Preechaya Phetprasert is the Head chef at the Coconut Kitchen. She trained as a chef in Thailand and was taught many different recipes by her mother who was a cookery teacher in a town called Pak Chong, 2 hours north of Bangkok. Preechaya then spent 4 years as a Chef de Partie in a top London gastro pub where the menu centred on European and Asian fusion cuisine. She and her husband Paul, opened The Coconut Kitchen in a Catering trailer in Tyn Y Mur Campsite in Abersoch in May 2006. A year later they moved to a 40 seater open plan restaurant by the harbour in Abersoch. They make all their own sauces, and now bottle the most popular so you can recreate delicious Thai meals at home.
