This is a smooth tasty pepper sauce which is laid down like fine wine. and takes time to mature. Depending on batch, the colour and heat can vary due to the peppers themselves, but the taste is consistent.

Look on other hot sauce bottles and you will see ingredients such as guar gum, lecithin, colourings and other chemicals. The ageing process eliminates the need for chemical additives. Ooft! is the only hot sauce made in the UK that's aged like fine wine in vats for between 1 and 3 years.

Ooft! is a small artisan chilli sauce maker based in the Scottish Borders. Their Scotch Bonnet peppers come from the Caribbean, and the love of hot sauce is what drives them. Lancelot Paul (Rudy) DeCoteau was a Trinidadian master pepper make. He grew peppers and he experimented over many years with pepper sauce recipes. Its his recipe, handed down to his daughter, and brought to Scotland with her, that is the core of the Ooft! sauces made today.
