Serving Suggestion: Aubergine, Peas and Potato Curry
- Cube potatoes and aubergines.
- Pour Anila's Fruity Mild curry sauce in a saucepan and heat.
- Add the cubed vegetables and allow to cook in the sauce for 1-2 minutes to soak up the sauce.
- Add a jar of water and cook gently for 5-10 mins.
- Add 1 cup of frozen peas and simmer until the vegetables are tender.
- Garnish with fresh coriander and wedges of tomatoes.
- Serve with your favourite rice, chappaties or naan bread.
